They hadn't immediately recognized Him before. This could be due to a combination of factors. When Simon Peter heard that it was the Lord, he tucked in his garment, for he was lightly clad, and jumped into the sea. Peter's immediate response shows his eagerness to be with Jesus, even putting on clothes before swimming to shore. Jesus provided for his disciples. They get to shore and he's already got breakfast cooking! There are a lot of parallels between Jesus' breakfast meal and John 6, where Jesus fed the five thousand.
